Spaghetti Squash Spaghetti Recipe

Tender roasted spaghetti squash meets savory meat sauce and Parmesan for a comforting fall meal.

Serves: 4 | Total Time: About 1 hour

Ingredients

  • 2 medium spaghetti squash
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 jar (24 oz.) Essential Everyday Pasta Sauce
  • 1 teaspoon Italian seasoning
  • ½ cup grated 4C Parmesan Cheese
  • Fresh basil or parsley, optional

Instructions

  1. Prepare the squash: Preheat oven to 400°F. Carefully cut squash lengthwise and scoop out the seeds. Rub the cut sides with olive oil and season with salt and pepper.
  2. Roast: Place squash cut-side down on a baking sheet. Roast for 35–45 minutes, until the flesh is tender and easily pierced with a fork.
  3. Make the meat sauce: While the squash roasts, cook ground beef and onion in a large skillet over medium heat, breaking the beef into crumbles, until cooked through. Drain excess fat. Add garlic and cook for 30 seconds. Stir in pasta sauce and Italian seasoning; simmer for 10 minutes.
  4. Create the strands: Let the squash cool slightly, then use a fork to scrape the flesh into spaghetti-like strands.
  5. Serve: Divide squash among four plates. Top with meat sauce, Parmesan, and fresh herbs, if desired.

Make it meatless: Omit the ground beef and sauté the onion in a little olive oil before adding the garlic and sauce.

Complete your meal: Serve with garlic bread and a green salad, then enjoy pumpkin roll for dessert.
