Chesapeake-Seasoned Panko Catfish with Potatoes & Peppers
Serves 4 | About 35–40 minutes
Ingredients
- 1½ lb. catfish fillets
- 1 cup panko crumbs
- 1 to 1½ Tbsp. Chesapeake Bay Seasoning
- 1 package Simply Potatoes
- 2 green bell peppers, sliced
- Pantry basics: cooking oil or spray
Directions
- Preheat oven to 425°F. Lightly grease or spray a baking sheet.
- In a shallow bowl, combine the panko crumbs and Chesapeake Bay Seasoning.
- Lightly brush or spray the catfish fillets with oil, then press each fillet firmly into the seasoned panko mixture until well coated.
- Arrange the catfish on the prepared baking sheet. Lightly spray or drizzle the tops with oil.
- Bake for 15–20 minutes, or until the coating is golden and crisp and the fish is cooked through.
- While the catfish bakes, prepare the Simply Potatoes according to package directions.
- Sauté the sliced green bell peppers in a small amount of oil over medium-high heat for about 5–7 minutes, until tender and lightly browned.
- Serve the crispy Chesapeake-seasoned catfish with the potatoes and sautéed peppers.
