First of the Season! Local Spring Produce Has Arrived

There’s something magical about spring in Lancaster County. After a long winter’s rest, the fields come alive with fresh greens and vibrant flavors. Did you know Lancaster County is one of the top-producing regions for vegetables in Pennsylvania, especially early spring crops like lettuce, spinach, and radishes? Thanks to its rich soil and generations of farming expertise, our region bursts into life each spring with produce that’s as fresh as it gets. And now, that season’s just beginning to trickle into the stands at Shady Maple Farm Market.

We’re kicking things off with crisp, locally grown red and green lettuce—harvested just days ago. These tender leaves are perfect for tossing into light spring salads with radishes and a zesty vinaigrette, or layering onto sandwiches and wraps for a pop of color and crunch. Try using red leaf lettuce as a fresh base for grilled chicken, strawberries, and walnuts, or use the green variety as a crisp wrap for tuna salad or spicy tacos. However, you enjoy it, there’s nothing quite like the taste of just-picked lettuce to mark the start of the season.

But that’s just the beginning! Keep an eye out in the coming weeks for scallions—those mild, zippy green onions that can brighten up everything from potato salad to stir fry. They’re perfect for sprinkling over baked potatoes, mixing into omelets, or adding a fresh crunch to tacos and grilled meats.

Locally grown potatoes will be hitting our bins soon, too. These aren’t your average supermarket spuds—our Lancaster County potatoes are earthy, flavorful, and versatile. Whether you’re roasting them with rosemary, mashing them with garlic and butter, or slicing them thin for crispy homemade chips, they’re a pantry staple worth stocking up on.

Radishes and asparagus are also on the horizon. Crunchy, peppery radishes add zing to salads and slaws, or can be enjoyed simply with a bit of salt and butter. Asparagus, one of the most celebrated spring vegetables, is delicious roasted, grilled, or sautéed with olive oil and lemon. Try tossing it with pasta, adding it to quiche, or serving it as a side with your favorite springtime entrees.
