Choose bone-in for dramatic presentation or boneless for easy carving. Plan for about one pound per person for bone-in, and ½ to ¾ pound for boneless. Cook to 140–145°F and let it rest for 15–20 minutes for juicy perfection.
Looking for something even more refined? Our tenderloin roast, the same cut used for filet mignon, is the most tender beef you’ll ever serve. Cook it gently to medium and allow it to rest before slicing for melt-in-your-mouth flavor.
